1 stick butter
2 cup flour
1 t. vanilla
4 T. buttermilk (or 1/4 cup milk with 1 t. vinegar added, let sit for 10 minutes)
1 1/2 cup sugar
2 eggs
1 cup chopped pecans (or omit)
3 mashed bananas
1 t. baking soda w/ flour
pinch salt

Preheat oven to 300. Cream butter and sugar. Add remaining ingredients. Bake in several loaf pans for 28 minutes each or bundt pan for 1 hour to 1 hour 15 minutes.
