2 c. mashed potatoes 2 egg yolks (save the whites) 1/2 tsp. salt 1 T. parsley 1 tsp. instant minced onion 2 egg whites margarine
In medium bowl; mix potatoes with egg yolks, salt, parsley and onion. In small bowl; beat the egg whites until stiff, fold into potato mixture. Spoon into buttered muffin cups. Brush with melted margarine. Bake at 375º for 30-35 minutes, until golden brown.
