Spicy Chicken and Cashews Recipe

1 tbsp. crushed red pepper
1/2 tsp. all spice
1/2 tsp coriander
2 cloves garlic
black pepper
2 tbsp olive oil

1 lb boneless chicken breast
1 c cashews
3 carrots
1 leek
1 small onion
1 daikon (optional)
1/3 c soy sauce

1 tbsp corn starch and cold water

Combine marinade ingredients : crushed red pepper, all spice, coriander, garlic, black pepper, olive oil

Cut chicken into small cubes and add to marinade and let sit for at least 20 minutes.

In a saute pan or wok over high heat, cook chicken until done. Remove

Chop carrots, leek, onions and daikon into small bite size pieces. Add to hot pan with a small amount of olive oil. When vegetables get slightly tender, add chicken, cashews, and soy sauce.

add corn starch and water to thicken.

serve with rice.
