1 medium onion,
2 tbsp. butter,
2 eggs,
1 1/2 cups mashed potatoes,
1/4 cup flour,
1/4 tsp. salt,
1/8 tsp. pepper,
1 tbsp. water

Directions:
Directions:
In a large skillet, saute onion in the butter until tender, remove from the heat. In a large bowl lightly beat 1 egg, add the onion,potatoes,flour,salt and pepper. Shape into 4 to 6 patties, place on a greased baking sheet. Lightly beat remaining egg and stir in water. Brush over potato cakes. Bake at 375º for 20 to 25 minutes or until heated through.
