5 large baking potatoes
1 c. green onion, chopped
1/2 c. butter or margarine
1/2 c. light cream
2 tsp. salt
1 tsp. white pepper
1 c. sour cream
4 oz. bacon, cooked and crumbled
1 c. cheddar cheese, grated

Directions:
Preheat oven to 425º. Pierce potatoes with a fork. Bake until tender (40-60 min) and cool until able to handle. Cut potato in half lengthwise; carefully scoop out the pulp, leaving a 1/4 inch shell. Heat butter or margarine and light cream together, but do not boil. Add butter – cream mixture, chopped onions, sour cream, bacon pieces and salt and pepper to potato pulp and mash until smooth. Don't overmix. Stuff the potato shells and place on a baking sheet. Bake at 350 for 20-30 minutes or until heated through. Sprinkle grated cheddar cheese on top of the potatoes and broil until cheese melts. The potatoes can be stuffed ahead of time and refrigerated. Allow a bit more time for reheating.
