1/2 lb. ground beef
3/4 c. onion, chopped
3/4 c. carrots, shredded
3/4 c. celery, chopped
1 tsp. basil
1 tsp. parsley
4 T. oleo, divided
3 c. chicken broth
4 c. potatoes, cubed
1/4 c. flour
2 C. cheese, cubed
1 1/2 c. milk
3/4 tsp. salt
1/4 tsp. pepper

In roaster; brown beef, drain. Remove beef; put onion, carrots, celery, basil and parsley in 1 T. oleo in roaster, cook till tender, add broth, potatoes and beef, bring to boil. Reduce heat, simmer 10 minutes or until potatoes are tender. In small skillet; melt 3 T. oleo, add flour, cook and stir 3-5 minutes. Add to soup; bring to boil. Cook and stir 2 minutes. Reduce to low, add cheese, milk, salt and pepper.
