1/3 c. butter
1 c. sugar
1 tsp. coconut extract
1-1/2 c. Bisquick (1 small pkg.)
1 c. potato flakes
1/2 c. flaked coconut, optional

Directions:
Directions:
Cream together butter, sugar and coconut extract. Beat in egg. Add Bisquick, potato flakes and coconut and mix. Chill for 1 hour. Shape into 1-inch balls and bake on ungreased cookie sheet at 375 F for 12-14 minutes. If you don't let them get too brown, they'll stay chewy. If you want them to be crispy, bake until you see light brown edges.

The original recipe didn't call for coconut, but I like them better with some added. These cookies won Best in Section at the State Fair many years ago.
