6 lbs. ground beef
salt and pepper to taste
6 (15 oz) cans red kidney beans
6 (14.5 oz) cans stewed tomatoes
6 (14.5 oz) cans tomato sauce
12 stalks celery, chopped
5-6 medium onions, chopped
6 red bell peppers, chopped
1 1/2 c. balsamic vinegar
3/4 c. chili powder
2 T. ground cumin
2 T. dried parsley
2 T. dried basil
1/2 c. minced garlic
2 T. cayenne pepper
1 c. brown sugar

Directions:
Directions:
In a large skillet, cook ground beef until evenly browned. Drain off grease, and season to taste with salt and pepper. In a large slow cooker or roaster, combine the cooked beef, kidney beans, tomatoes, tomato sauce, celery, onion, red pepper and vinegar. Season with chili powder, cumin, parsley, basil, garlic, and cayenne pepper. Add brown sugar. Stir to distribute ingredients evenly. Cook on high in slow cooker or roaster for 6 hours or on low for 8 hours.
Makes about 36 servings.
