4 cups sliced zucchini
1 cup onion
2 Tbsp parsley
Salt and Pepper to taste
1/4 tsp garlic powder
2 eggs
2 cups shredded cheddar cheese

Directions:
Directions:
Saute zucchini and onion 10 minutes on stovetop or microwave till tender. Add parsley, salt and pepper and garlic powder. Combine eggs and cheddar cheese. Stir in squash. Pour into glass casserole or pie plate. Bake 375 for 18 to 20 minutes.
