1/2 cup butter 1/2 cup sugar 1/2 cup brown sugar 1/2 cup peanut butter 1/2 cup chocolate chip (opt) 1 egg 1 tsp vanilla 1 1/2 cup flour 1 tsp baking soda 1/4 tbsp salt granulated sugar (opt)
Preheat over to 350ºF. Beat butter and sugar until light and fluffy. Blend in peanut butter. Mix in egg and vanilla until well blended. Stir together flour, baking soda and salt, mix in peanut butter mixture until well blended. Shape rounded tsp of dough into balls, place 1 1/2" apart on ungreased cookie sheet. Flatten with fork. Bake 12-15 minutes until lightly browned.
