1 lb okra (washed and sliced into 1" pieces); 1 small onion, diced; l large clove garlic (or more), diced; 4-5 slices bacon (If Benton's, 1 slice + 4 reg. bacon; 1/2 tsp. ground thyme; 1/2 or more tsp cumin; 1 can (14.5 oz) diced tomatoes; salt and pepper to taste; Dash of tabasco if desired (Robert desires).

Fry bacon. Remove from pan, pour off all but about 3 Tblsp bacon fat. Crumble bacon and set aside. Saute onion and garlic in bacon fat for 2-3 mins. Add okra and saute, medium heat, 3-4 mins. Add tomatoes and seasoning, pinch of sugar. Cover with lid and cook on medium heat for about 4 minutes. You want the okra to be soft but not mushy. It's better with a little crunch. Increase seasoning if desired, particularly cumin. Spinkle with crumbled bacon. Enjoy.
