Sweet Potato Bread Recipe

1 c. dark brown sugar
1/2 c. granulated sugar
1 c. cooked mashed yams
1/2 c. salad oil
1/2 c. walnuts, chopped
2 unbeaten eggs
2 c. sifted flour
1/2 tsp. salt
1/2 tsp. soda
1/4 c. water
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/4 tsp. ginger
1 c. raisins

Combine sugars, yams, oil and eggs and beat well. Sift flour, soda, salt and spices. Add to sugar ingredients and mix well. Stir in raisins, nuts and water. Pour into a well-oiled 9x5x3 inch loaf pan. Bake at 350 for 65-70 minutes.
