2 cups all-purpose flour
3/4 cup sugar
11/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
3/4 cup chopped pecans
1 large egg
1/4 cup vegetable oil
2 tsp grated orange rind
3/4 cup orange juice
11/4 cups fine-chopped fresh rhubarb


Directions:
Directions:
In large bowl, combine flour, sugar, baking powder, baking soda, salt and nuts.

In medium bowl, beat egg. Add oil, orange rind and juice. Add to flour mix all at once and stir just until batter is moist. Stir in rhubarb.

Spoon batter into greased muffin pans, filling three-quarters full. Bake at 350 F, 25 to 30 minutes.
