1 1/2 c. oil
2 c. sugar
4 eggs
2 c. grated carrots
1 c. crushed pineapple and juice (8 oz. can)
1 c. chopped walnuts
2 1/2 c. flour
1 tsp. baking soda
1 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. salt

Frosting:
2 tsp. vanilla
8 oz. cream cheese
1 cube butter or margarine
1 box powdered sugar

Directions:
Directions:
Blend oil, sugar, and eggs. Add carrots, pineapple, juice and nuts. Sift together flour, soda, baking powder, cinnamon, and salt. Gradually add flour mixture to carrot mixture. Pour into greased and floured pans.
Three 8-inch pans, bake at 350º for 25- 30 min.
One 9 x 13 inch pan, bake at 350º for 45- 55 min.

Frosting:
Blend and spread on cool cake.
