4 1/2 c flour
3 c sugar
8 oz sour cream
3 tsp baking soda
3 eggs
7 very ripe bananas*
1/2 tsp salt
2 tsp vanilla
3/4 c margarine

Directions:
Directions:
Preheat oven to 350º. Spray mini loaf pans with Pam. Cream together vanilla, bananas, margarine, sugar, eggs and sour cream in a very large bowl. In a separate bowl, stir together the flour, salt, and baking soda. Slowly add the flour mixture to the banana mixture. Stir until just mixed. Spoon into prepared pans, filling each 1/2 to 3/4 full. Bake 45 minutes, until golden brown. Turn out onto cooling racks. Let cool, the keep refrigerated, or freeze until ready to eat.

* bananas will be very mushy if frozen, then thawed prior to mixing. We save over-ripe bananas in the freezer, in their skins, until ready to make this bread.
