4 eggs
1 1/2 c. milk
1/2 tsp. ground mustard
1 c. shredded Swiss cheese
1 box frozen spinach
1 pkg. Knorr spring vegetable dry soup mix

Directions:
Directions:
In bowl, beat eggs, milk & mustard together. Toss in cheese and soup mix. Add spinach that has been thawed and squeezed dry. Spray a pie plate with non-stick spray and pour in egg mixture. Bake at 400 for 45 minutes. (Can be made the night before and baked in the morning.)

This is one of my most requested recipes. It's full of flavor and without the crust, a really healthy and low fat meal.
