Good with any fresh fish, shrimp or scallops or a combination of sea food. Here in Baja we call Mahi Mahi or Dolphin fish, Dorado
For each serving, you need

1, 6 oz fish filet
1 ˝ TBL Butter
˝ TBL oil
1 minced garlic clove
1 TBL + chopped fresh cilantro leaves
1TBL clear Tequila, less per serving if more fish is in the pan
Salt and pepper

Directions:
Melt butter and oil in sauté pan, bring to a soft bubble, add fish, do not crowd. Sprinkle fish with salt and pepper, add the garlic and cook 3 minutes until fish starts to brown just a little. Turn fish and cook about 2-3 minute more depending on thickness. Sprinkle cilantro in pan around fish. Pour tequila over fish and light with a long handled lighter. Leaning back away from the flame while igniting. Give the pan a shake continue cooking until the flame is out and fish is opaque inside or done to your liking, about 1 more minute. Total cooking time about 6-8 minutes depending on thickness of fish and number of pieces in pan.

Plate fish next to rice or plain or lightly buttered noodles and spoon remaining sauce over both.
