2 cans Ranch Style Black eye Peas – drained
1 can white or yellow hominy – drained
2 fresh tomatoes – chopped
1 fresh jalapeño – chopped
8 green onion – chopped
2 garlic cloves – minced
1 green pepper – chopped
¼ to ½ cup dried parsley
4 to 6 oz Italian dressing (Zesty Italian works best)

Directions:

Combine all ingredients. Pour salad dressing over, mix, marinate at least 2 hours.
Serve with tortilla chips.
