2 boneless, skinless chicken breasts
1 large or 2 medium-sized celery stalks
Red or green seedless grapes, halved or
mandarin oranges or
peeled diced apple
Pecans or walnuts, chopped or broken into pieces
Mayonnaise-regular, lite or fat free

Directions:
Directions:
Simmer the chicken breasts in lightly salted water to cover until cooked thoroughly. Cool. Cut into small pieces.Wash and finely chop celery.
In medium bowl, place chicken and celery, add one of the fruits and either walnut or pecan pieces. Stir in enough mayonnaise to coat. Season with salt and pepper.

Serve on bed of lettuce with croissant on side.
