2 boneless, skinless chicken breasts (6-8 oz. each)
salt and pepper
8 oz. button mushrooms, halved
1/2 c. dry marsala
1/2 c. beef broth
2 oz. prosciutto or ham, chopped
2 tbsp. chopped fresh sage
2 tbsp. unsalted butter

Slice chicken breasts in half lengthwise. Pound each piece with a meat mallet until 1/4 inch thick; season with salt and pepper. Saute 2 breast pieces in oil in large saute pan over medium-high heat until browned, 3-5 minutes. Turn and cook 2 minutes more, then transfer to plate. Saute remaining chicken in same way; keep warm. Cook mushrooms in the same pan over high heat until starting to brown, 5 minutes. Add more oil if needed. Deglaze pan with Marsala scraping up any browned bits then add broth and bring to a boil. Simmer until liquid is reduced by half, about 5 minutes. Off heat, stir in prosciutto or ham, sage and butter until butter melts. Season with salt and pepper. To serve, spoon sauce over warm chicken breasts.

TIP: to keep from tearing the chicken, pound it in a resealable plastic bag with water sprinkled inside. Serve with spinach noodles.
