2 c. flour, 1 1/4 c sugar, 2 tsp. baking powder
,2 tsp. cinnamon,1/2 tsp salt, 2c.grated carrots,
1/2 c raisins , 1 apple grated 3 eggs
3/4 c oil 1 1/2 tsp vanilla
optional are 1 c coconut 1/2c nuts

combine dry ingredients mix well and add eggs,oil and vanilla Bake @ 350 for 20 -25 mins

I usually make the batter at nite then pout in muffin tins in morning then have time to get coffee and dressed by then muffins are ready
