Ingredients: 1 1/2 pounds lean ground beef 1 large onion, chopped 1 (14.5 ounce) can Mexican-style stewed tomatoes, undrained 1 (10 ounce) can mild enchilada sauce 8 ounces processed cheese, sliced 2 tsp. ground cumin 1/2 tsp. salt 1/2 tsp. pepper 2 C tortilla chips, crushed 1 (3 ounce) package cream cheese, softened 8 (8") flour tortillas 1 (4 ounce) can green chiles, diced 1 C jack cheese, shredded

Directions:Brown ground beef and onion in a large skillet, stirring until meat crumbles; drain fat. Stir in tomatoes, enchilada sauce, sliced cheese, cumin, salt and pepper. Cook over low heat, stirring constantly, until cheese melts; set aside. Preheat over to 350 degrees. Place crushed tortilla chips in greased 9" x 13" baking dish. Spoon 2/3 beef mixture over tortilla chips. Spread about 1 teaspoon cream cheese evenly on 1 side of each tortilla and sprinkle evenly with chiles. Fold tortillas in half and arrange on beef mixture. Spoon remaining beef mixture on top of tortillas and cover. Bake 20 minutes. Uncover casserole and sprinkle with jack cheese. Bake 5 minutes more to melt cheese. |

Notes: I cooked this recipe tonight and we loved it. Mike suggested that we add beans and rice to the bottom of it as well. We keep almost all of these ingredients on hand already so this is very quick to do. It helps if you cook up your ground beef earlier in the week and season it however you like.
