1/4 c. veg. oil
1 large onion - chopped
1 small bell pepper - chopped
1 med. celery rib - chopped
1 lb shrimp, peeled and deveined
1 tsp salt
1/4 tsp cayenne pepper
2-3 tbsp flour
1/2 cup - 1 cup water
dash of tabasco
1 tbsp parsley (for garnish)

In a large skillet heat oil over medium heat. Add onions, bell peppers, and celery and saute, stirring often until limp (about 15 minutes).
Add shrimp, salt and cayenne, cook 3-5 minutes until shrimp is pink. Sprinkle with flour. Toss to coat the shrimp. Add 1/2 cup of water (add more if needed). Simmer 4-5 minutes, stir in tabasco. Sprinkle with parsley.

Serve over cooked rice.
