8 oz. tofu (blot well with paper towels)
3 eggs well beaten
1/3 jar Polaner peach jelly
1/2 tsp. vanilla
1 can sliced peaches in pear concentrate or water drained and cut in small pieces

Directions:
Directions:
Blend tofu, eggs, peach jelly and vanilla well. Pour half of the mixture in pan. Add drained peaches. Cover with remaining half of mixture. Sprinkle with cinnamon.
Bake at 350 degrees for 25 minutes or until knife inserted comes out clean.

This is mainly sugar free and tastes pretty good if you can't have anything with sugar. Strawberries or blueberries can be substituted.
