1 sm. bottle Paul Newmans Oil & Vinegar dressing
1 lg. Pkg. Yellow rice (Saffron) or 2 small cook according to instructions on package
box frozen green peas
1 can artichoke hearts cut into quarters
1 2 oz. jar pimentos (may use red pepper diced)
1 pkg. Crumbled Feta cheese
bell pepper diced

1 lb. shrimp cook and peel
for main dish add more shrimp

Let peas thaw in box or microwave for 1-2 minutes.
Add all ingredients to rice and cover with bottle of salad dressing.

May serve warm or at room temperature.
