Place chicken in pot with onion and 1 tablespoon salt.
Cover with water and cook until done.
Remove chicken, cool, and pull from bone.
Measure chicken stock; add enough water to make 8 cups of liquid.
Pour into heavy pot and let it come to a boil.
Add chicken, rice, seasonings, eggs, and sausage.
Let come to a boil and stir well once.
Reduce heat to low, cover and cook without stirring until done (approx. 25-30 minutes).
