2 c. sugar
4 eggs
1 1/2 c. vegetable oil
3 c. finely grated carrots
1/2 c. chopped walnuts
2 c. flour
2 tsp. cinnamon
2 tsp. soda
1 tsp. salt

Directions:
Directions:
Preheat oven 300 degrees.

Grease 9 x 12 baking pan; or 2 round pans.

Mix sugar, eggs and oil and beat until smooth.

Add sifted dry ingredients, mixing well.

Fold in carrots and walnuts.

Bake 50 to 60 minutes.

Frosting:

1 8 oz pkg cream cheese
1/2 cube butter softened
2 tsp. vanilla
1 box powdered sugar

Mix well and pour over cake.
