2 cups flour -
1 cup sugar -
1 1/2 tsp baking powder
2 tsp orange rind -
3/4 cup orange juice -
1/4 cup canola oil -
2 cups chopped fresh cranberries -
1/3 cup chopped walnuts, toasted

Directions:
Directions:
Preheat oven tp 400º.
Lightly spoon flour into dry measuring cup. Set aside 1 T sugar. Combine flour,remaining sugar, baking powder, and baking soda in a large bowl, make a well in center of mixture.
Combine rind, juice, oil and egg in a small bowl, stirring well with a wisk. Add to the flour, stirring just until moist. Fold in cranberries and walnuts. Spoon batter into 16 muffin cups. Sprinkle evenly with reamining sugar. Bake atg 300º for 15 minutes or until the muffins spring back when touched lightly in center. Run a knife around outer edge of each muffin cup. Carefully remove each mujffin and place
