1 c. uncooked long grain rice
2 T. oleo
1/2 c. green pepper, chopped
1/2 c. onion, chopped
2 garlic cloves, minced
2 cans (14 1/2 oz each) diced tomatoes, undrained
1/2 c. pimientos
1 tsp. chili powder
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. turmeric
1/2 c. cheddar cheese
Can add 1 lb. cooked ground beef

In large skillet, saute rice in oleo for 5 minutes, stirring constantly. Add green pepper, onion and garlic. Cook and stir 2-3 minutes. Add tomatoes, pimientos, chili powder, salt, pepper, turmeric and meat (if you like meat added), mix well. Cover and simmer or 20-25 minutes. Sprinkle with cheese.
