2 large eggs
1 cup sugar
1 tablespoon butter- melted
juice and rind of 1 lemon (3 tbsp lemon juice)
Pet Ritz pie crust
vanilla
Directions:
Directions:
Melt butter in saucepan over medium heat
Add sugar and stir well with whisk
Add eggs one at a time, stir
Add vanilla
Mix in rind and juice until dissolved and starts to thicken

Pour mixture in pie crust.

Bake at 350º for 30 -35 minutes
