1 lb (or less) thin spaghetti
1 lb sugar snap peas
1 cup vegetable oil
1/4 cup rice wine vinegar
1/3 cup soy sauce
3 tbsp dark toasted sesame oil
1 tbsp honey
2 garlic cloves minced
1 tsp fresh ginger grated
3 tbsp toasted white sesame seeds
1/2 cup smooth peanut butter
2 red bell peppers thinly sliced
4 scallions sliced
3 tbsp chopped fresh parsley

Directions:

Cook spaghetti, drain and set aside. Quickly cook snap peas briefly in boiling water and cool in ice bath immediately. Dressing: whisk together the oil, rice wine vinegar, soy sauce, sesame oil, honey, garlic, ginger, 2 tbsp of the sesame seeds and peanut butter. Combine everything in a large serving bowl toss with the dressing. Sprinkle parsley and sesame seeds on top.
