Cold Mashed Potato's (Bowl Full) (5-6 potatoes)
1 Onion (Chopped Finely)
1 Egg (beaten)
3 - 4 Tablespoons of Cornmeal Mix (more if desired)

(First fix Mashed Potatoes) boil about 5-6 potatoes (chopped) in water with 1 teaspoon salt and cook until tender.
Drain water off potatoes.
To the potatoes add 4 tablespoons of butter and 1/4 - 1/2 cup of milk.
Mix together with hand mixer.
Put in Refrigerator until cool.

Mix together Potatoes, Beaten Egg, Finely Chopped Onion and corn meal mix.
Now take a frying pan and add about 1/2 cup of oil and heat.
When oil is good and hot drop in a spoon full of potatoes at a time.
Turn when brown on bottom and cook until done.
Drain on a paper towel and serve.
