4 tbsp. butter
11 oz. onion~julienne
.25 oz. chopped garlic
3 lbs. potatoes~peeled and diced
1/2 gal. water
2 oz. chicken base
1 tsp. Kosher salt
1 tsp. white pepper
11 oz. low-fat sour cream
13 oz. cheddar cheese~grated
4 oz. bacon bits
2 oz. green onion~finely chopped

Directions:
Over medium heat, melt butter. Do not brown. Add onions and saute till soft and translucent. Do not brown. Add chopped garlic and saute an additional 2 minutes. Add water, chicken base, and potatoes. Bring to a boil, lower heat, and simmer till potatoes are tender. Approximately 15 minutes. Using a buerre mixer, puree the soup until smooth. Add salt, pepper, and sour cream, and blend well. Slowly add cheddar cheese, stirring constantly till incorporated. Add bacon and green onions. Blend well.
