marinade:
1/3 cup light soy sauce
1 garlic clove, crushed
1 1/2 tsp. grated lemon peel
1/2 c. olive oil
1/4 c. fresh lemon juice
1 tsp. parsley
6 - 1" thick pieces of salmon
Butter:
1/4 c. butter
1/2 c. mashed artichoke hearts
2 garlic cloves, minced
5 1/2 tbs. lemon juice
2 1/2 tbs. fresh parsley

Make marinade, by combining first 6 ingredients.Cut shallow slits in fish & place in shallow plate. Pour marinade over, cover & refrig. 4-5 hours. Turn twice
Soften butter & whip with whisk until creamy, beat in artichoke, garlic, parsley, & lemon juice. Refrigerate.
Preheat broiler. Drain fish, reserving marinade. Broil 9-10 min. (turning once, brush with marinade). Remove to warmed platter. Top each steak with 1 tbs. butter.
