1-15 oz. can black-eyed peas, rinsed and drained
1/2 c. light sour cream
1/4 c. water
1 medium green onion, cut into 2" pieces
1/2 tsp. ground cumin
1 medium garlic clove
1/2 tsp. salt
1/4 tsp. red hot-pepper sauce

Put all ingredients in a food processor or blender. Process until smooth, stopping occasionally to scrape the side with a rubber scraper. Serve at room temperature. Can be refrigerated for up to 48 hours.
