2-15 oz cans black eyed peas (drained)
1 red onion (chopped)
1 red pepper (chopped)
2 Tablespoons of fresh chopped parsley

Dressing:
Dash Salt
Dash Pepper
1/4 cup oil
2 Tablespoons White Vinegar
2 Tablespoons Sugar

Directions:
Directions:
Drain black eyed peas well, rinsing with a little water would be okay too.

Combine ingredients except dressing. Combine dressing in separate bowl and pour over other ingredients, mix thoroughly or put in a container and shake it to incorporate. Put into refrigerator and chill for at least 1 hr. Enjoy!

Refreshing, great summer salad but good anytime! A Chef gave me this recipe when he catered a luncheon for me, he called it Virginia Caviar.
