Honey - 1/4 cup
Cider Vinegar - 3 tbsp
Olive Oil - 2 tbsp
Shallot - 1 small diced
Dijion Mustard - 2 tbsp
Poopy Seeds - 1 tbsp
Salt and Pepper - to taste

Mix all ingredients together for dressing and toss with fresh spinach and strawberries. Serve immediately.
