1 Pkg. active dry yeast
1 Cup warm water
1 1/2 cups all purpose flour
1 Tbsp. olive oil
1 tesp. salt
2 additional cups flour

Directions:
Soften 1 pkg active dry yeast in 1 cup warm water. Beat in 1 1/2 cups all purpose flour, mix in 1 Tbsp. olive oil & 1 tesp. salt, stir in 2 cups additional flour. Knead till smooth & elastic, about 12 minutes (will be firm) Place in lightly oiled mixing bowl, turn oiled side up. Let rise in warm place till more than double-1 1/2 to 2 hrs. Punch down, cover & chill till cold.

Cut dough in 2 parts on lightly floured surface, roll each in 12 inch circles about 1/8" thick place on greased baking sheet or two12" pizza pans turning edges up slightly, with knuckles dent dough here and there to prevent it bubbles from forming.

Brush each circle with 1 Tbsp. olive oil, fill with desired filling bake in hot oven 425º for 20-25 min. or till crust is done

This was my dads recipe, Eugene (Gene) Griffith, he was a great cook and loved to cook. He was a cook in the army, and was a cook-Staff Sargent in the National Guards when he was killed in a mining accident on Jan. 24, 1969.
