2 Cups Sugar
3/4 cup oil
4 eggs
2 cups flour
1 teasp. salt
2 teasp. soda
2 teasp. cinnamon
3 cups carrots

Directions:
Directions:
Mix oil & sugar-beat well-add eggs one at a time-beat good after each egg. Sift all dry ingredients 2 or 3 times-Mix with sugar mixture, add carrots a small amount at a time. Pour in 2-9" cake pans-Bake 1-Hr at 300º (that's according to your oven. Mine bakes in 45 min.

This was one of the favorites of the entire family including grandchildren, of course it had to have the cream cheese icing with black walnuts on top. Granny had to bake this every time someone in the family came home especially on holidays.
