1 large onion, chopped
1 bell pepper, chopped
2 ribs celery, chopped
8 oz. smoked sausage, sliced
1 can (28 oz.) diced tomatoes in juice
3 cloves chopped garlic
1 tsp. dried thyme leaves
1/2 tsp. each of salt, pepper and hot sauce
12 oz. peeled and deveined raw shrimp
2 T. chopped fresh parsley

Mix all ingredients except shrimp and parsley in a 3 1/2 qt. or larger slow cooker. Cover and cook on low 6 to 8 hours until vegetables are tender. Stir in shrimp; cover and cook 20 minutes or until done. Stir in parsley; Serve over rice.
