1/2 lb. butter at room temperature
1 1/4 c. sugar
4 large eggs at room temperature
2 Tbs. mild honey
2 tsp. pure vanilla extract
1 tsp. grated lemon peel
1 3/4 c. sifted cake flour
1 tsp. salt
1/2 tsp. baking powder

Directions:
Directions:
Preheat oven to 325º.

Cream butter and sugar until light. Add eggs, honey, vanilla and lemon zest. Add eggs one at a time to the cream mixture. Mix at a low speed adding flour, salt and baking powder. Pour into greased pan.

Bake 50-60 minutes until toothpick comes out clean when placed in center of loaf. Cool for 15 minutes then turn out of pans. Cool completely before using.

I sometimes make this in a Bundt pan. This cake is really good for a strawberry short cake but can be eaten with any fruit.
