1 stick butter
1/2 c. oil
2 eggs
1 3/4 c. sugar
1 Tbs. butavon flavoring
(found at most cake supply stores)
1 c. buttermilk
1/2 c. juice from blueberries
1 Tbs. baking powder
1 tsp. baking soda
3 c. flour
1 c. blueberries


Directions:
Directions:
Mix all dry ingredients. Mix buttermilk and blueberry juice. Cream sugar and butter. Add eggs one at a time. Slowly add juice mixture. When smooth, add dry ingredients slowly, mixing until smooth.

Fold blueberries into batter carefully. Pour into greased muffin tin. Bake at 400º for 18-20 minutes.

These muffins at the 50 Yard Line Restaurant in Lubbock, Texas. The butavon flavoring gives the muffins an usual taste that you can't get without the flavoring.
