1 cup rice
1/4 tsp. salt
1 tsp. vanilla
3/4 c. sugar
4 egg yolks

Directions:
Cook the rice(rinse the rice in water first) and milk until the rice is done and somewhat thick. Stir it a lot so it does not scorch.
Mix together the next four ingredients. When rice is done quickly stir in the egg mixture and return to the stove top for a few more minutes. Pour rice pudding in a flat glass dish. You can top this with a meringue of 4 egg whites, 1/4 tsp. cream of tartar, and 8 tsp. sugar whipped stiff.
