This recipe for New Years Greens for Prosperity, by Karen Pretti, is from The Great Family Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
Either fresh or frozen greens (I prefer collard greens) 1/3 lb bacon cut up 1/4 onion diced 1 clove garlic 1 T. oil vinegar salt and pepper to taste water pepper sauce (sauce from pepper packed in vinegar)
Brown onion, garlic and bacon in oil. Add greens, cook until slightly wilted. Cover with water, bring to boil, turn down and simmer until tender. Salt to taste. I like to also add about 1/8 c. white vinegar.
Serve with slotted spoon, add pepper sauce to taste if you like.
Served in the South as a New Years Day dish often with ham and greens for good luck and prosperity.
