2 large Yukon Gold potatoes (1 lb), scrubbed well
11/2 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
1/8 teaspoon freshly ground pepper
11/2 tablespoons of balsamic vinegar

Directions:
1. Preheat oven to 400º
2. Halve potato lengthwise, then cut each half lengthwise into 4 wedges.
3. In a bowl, toss potato wedges with oil, salt and pepper.
4. Put a shallow (1-inch deep) rimmed baking sheet in the oven for 3 minutes.
5. Arrange potatoes in 1 layer and roast, turning once, until golden brown and cooked through, about 20-25 minutes.
6. Sprinkle with 1 tablespoon of vinegar, shaking pan to distribute vinegar evenly. Roast 1-2 minutes.
3. Serve sprinkled with remaining 1/2 tablespoon of vinegar and salt to taste.
