2 russet (Idaho) potatoes, peeled, rinsed and patted dry
3 tablespoons vegetable oil
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground pepper

1. Preheat oven to 500º.
2. Cut potatoes lengthwise into 1/3-inch thick slices, then cut each slice into 1/3-inch-wide sticks.
3. Put sticks in a bowl and toss with oil, salt and pepper.
4. Heat a large 1-inch-deep rimmed baking pan in the oven for 3 minutes.
5. Spread potato sticks in one layer in the pan.
6. Bake in the lower third of the oven for 10-12 minutes.
Loosen potatoes from the bottom of the pan with a metal spatula, turn over and spread out again.
7. Bake until crisp and golden brown, about 5 minutes more.

If you are making these fries with the Crispy Oven-Fried Cod, bake the potatoes in the lower third of the oven and place the fish in the upper third after the potatoes have roasted for 12 minutes.
