6 pounds of sweet potatoes, skins on
1/2 tsp. cloves
1 tsp. cinnamon
1 tsp. nutmeg
2 tsp. kosher salt
2 cups warm whole milk
4 T. butter
1 16 oz. bag of marshmallows (can use large or small)
Fresh ground pepper to taste

Preheat oven to 325. Cut sweet potatoes into 2-inch slices and leave skin on. Add to a large pot and cover with water. Bring to a boil and gently boil for 30 minutes (potatoes should be firm, not mushy). Drain. Peel potatoes while running cold water over them. Mash in a bowl with a masher or beaters (some chunks OK).

Put potatoes back in large pot over medium heat and add cloves, cinnamon, nutmeg, butter and salt. Pour in the milk a little at a time. Mix well. Spread potatoes evenly into a coated 10x14 baking dish, leaving room to add marshmallows on top. Add marshmallows in a single layer (if using large marshmallows, line up in rows). Bake for 30 minutes, checking frequently, or until marshmallows are golden brown.

If you make the potatoes a few hours before your meal and refrigerate, back first without marshmallows to heat through and then add marshmallows for last 20 minutes or so.
