2 sticks unsalted butter
1 cup packed dark brown sugar
1/2 cup granulated sugar
2 large eggs
3/4 tsp. fine salt
1/2 tsp. baking soda
1/2 T. vanilla
3/4 cup all-purpose flour
3/4 cup white whole wheat flour
2 1/2 cups old-fashioned rolled oats
1 cup coarsely chopped pecans, optional

Directions:
Directions:
Preheat oven to 350 and line cookie sheets with parchment paper if preferred. Cream butter and sugar and beat until fluffy. Add the eggs and beat well. Add the salt, baking soda and vanilla and mix at medium speed until blended. Add the flours and mix at low speed until smooth. Stir in the oats and nuts. Drop generous tablespoons of dough 2 inches apart on cookie sheets and bake for about 15 minutes. Cool 1 minute before transferring to cooling rack.

Can also add 1 1/2 cups of raisins, chopped dried fruit or chocolate chips.
