500g cheddar cheese
2 tsp curry powder
1/2 capsicum
1 shallot
4 tbs mayonnaise
1 loaf bread

Take your bread and cut off the crusts with a bread knife (either feed these to the dog, make bread crumbs with them, or make a snazzy bread & butter pudding).
Using a rolling pin, roll each piece of bread separately so that it's thin, and even.

Grate the cheese VERY fine (on the second smallest side of a square grater). Put into a bowl with the moonrises and curry powder.
Chop up the shallot and the capsicum very finely with a share knife. Put into bowl with the cheese.

Mix around, add more mayonnaise if it isn't sticking together. Add more/ less ingredients to taste. Add some finely chopped, cooked bacon for an extra kick.

Take rolled out bread, and spread a spoon full of mixture onto it. Roll it up, and cut into two or three, securing with a toothpick.
