1 cup (125g) ready-made cornflake crumbs
1/2 (30g) finely shredded Parmesan cheese
2 eggs
1/4 cup (60ml) milk
1/2 cup (75g) plain flour
500g chicken tenderloins
olive oil spray
good quality mayonnaise to serve

Preheat oven to 220c. Line 2 baking trays with non-stick baking paper.
Combine crumbs & Parmesan on a plate. Whisk eggs & milk in a shallow bowl and place the flour on a separate plate.
Cut each tenderloin in half. Lightly dust pieces with flour, dip in egg mixture - allowing excess to drip off - then coat well in crumb mixture. Place on the lined trays. Spray lightly with the olive oil, turn chicken pieces over and spray other side.
Bake 10 minutes. Turn chicken over and bake for a further 5-10 minutes or until golden and cooked through. Remove from oven and cool slightly before serving with the mayonnaise.

Can be used for full chicken fillets for main meal. Extend cooking time to approx 45 minutes to cook right through.
